Las exportaciones de jamones y paletas curadas españolas se han elevado un 9,29% en 2025, hasta alcanzar los 802,8 millones de euros, según los datos de la AEAT, analizado por el Consorcio del Jamón Serrano Español (CJSE).

En concreto, a lo largo del pasado año se exportaron un total de 64.138,78 toneladas, frente a las 60.851,20 toneladas exportadas en 2024, lo que ha supuesto un incremento del 5,4% en términos de volumen.

Por su parte, el precio medio del kilo de jamón ha aumentado en un 3,68% durante este período al situarse en 12,52 euros en relación a 2024, cuando era de 12,07 euros/kilo. En la Unión Europea, éste se situó en 11,74 euros frente a los 14,35 euros de Países Terceros, conllevando un ascenso del 4,54% y del 2,39%, respectivamente.

El CJSE ha explicado este aumento del precio medio en los Países Terceros porque existe una menor competencia, se suele trabajar con agentes intermediarios y además los costes logísticos son también mayores.

Tras un positivo 2025, el sector encara con prudencia el 2026, por el impacto que pueda tener los casos de Peste Porcina Africana (PPA). "Afrontamos 2026 con importantes retos derivados de la situación de la peste porcina africana que afecta a España. De hecho, si analizamos únicamente el mes de diciembre, ya se aprecia el efecto de esta coyuntura en algunos mercados estratégicos, especialmente en México y Japón. Desde el CJSE queremos reforzar nuestro compromiso de seguir trabajando para consolidar la confianza de los mercados internacionales en el jamón serrano español", ha explicado el director de Marketing y Promoción del Consorcio del Jamón Serrano Español, Álvaro Díaz de Liaño.

En este contexto, el Consorcio ha reiterado su intención de seguir "colaborando y apoyando los esfuerzos de las administraciones y de todas las instituciones, reforzando el compromiso con la tradición del jamón serrano de calidad".

A nivel global, los países de la Unión Europea importaron un total de 45.046,91 toneladas durante este ejercicio, aumentando un 6,16%, mientras que los Países Terceros registraron un volumen de 19.091,87 toneladas, lo que supone un 3,66% más. Así, durante 2025, la Unión Europea ocupó el 70,2% de las exportaciones de jamón curado, mientras que el 29,8% corresponde a Países Terceros.

Dentro de la Unión Europea, los principales mercados de referencia para el jamón curado son Francia, con un volumen que asciende a 12.233,58 toneladas, seguido de Alemania (11.833,01 toneladas), lo que representa, entre ambos mercados, un 37,52% del total.

Respecto a los Países Terceros destaca el comportamiento de China, con un crecimiento en valor del 37,68%, y Reino Unido como uno de los mercados con los precios más elevados con 17,6 euro/kilo.

Por otro lado y según los formatos, un 21,23% de las piezas exportadas corresponden al formato con hueso, lo que ha conllevado un aumento del 35,87% en términos de volumen, y del 45,1% en cuanto a valor.
